Orange Jewel Cake
Ingredients :
- 1 cup butter
- 2 cups sugar
- 2 tsp. grated orange rind
- 4 eggs
- 1 tsp. baking soda
- 1/2 cup buttermilk
- 3 1/2 cups sifted flour
- 2 cups chopped nuts
- 1 pound candy orange slices, chopped or sliced
- 1/2 pounds chopped dates
- 1 cup flaked coconut
Preparation:
- Preheat oven to 300 oF
- Cream butter/sugar in bowl - add orange rind.
- Add eggs one at a time. Beat well after each.
- Dissolve soda in buttermilk and add alternately with flour.
- Add nuts, candy orange slices, dates, coconut. Mix well.
- Pour batter in greased bundt cake pan. Bake for 1/1/2 hours.
- Once cake is removed from bundt pan, drizzle glaze over top.
Preparation:
- Orange Juice
- 2 cups confectioners sugar, 10X
- 2 tsp. grated orange rind
- Mix dry ingredients well with enough orange juice to make a smooth glaze.
