Fish Florentine

4 slices fish flounder/orange roffey
1 (10 oz.) pkg. frozen spinach
1/4 cup thinly sliced scallions
1/4 tsp. ground nutmeg
1/8 tesp paprika
1/4 cup dry white wine
2 Tbsp. lemon jiuce
1 Tbsp. chopped fresh dill

Spread fish flat. Slightly saute' spinach and scallions; add nutmeg. Spread over fish. Roll up and fasten with toothpicks. Place in baking dish. Sprinkle with paprika. Pour wine and lemon jiuce around fish. Sprinkle dill, Bake at 350o for 25 minutes. Serves four.
