Mama's Red Rice




  • 1 cup chopped onions
  • 1/2 cup chopped bell pepper
  • 1 can tomatoes (2 cups)
  • 6 Tablespoons bacon drippings
  • 1 Tablespoon salt
  • 1 teaspoon sugar
  • 3 Tablespoons chili sauce
  • a dash cayenne pepper (or more for the brave at heart)
  • 1 cup rice

    Saute onions and bell bepper in bacon grease for about 10 minutes. Mix all remaining ingredients and let stand for about 20 minutes. Then add to onions and peppers. Simmer for about 30 minutes.

    Optional: Add cubed ham or sliced sausage pieces.
