Light 'n Lemony Bars




Crust:

  • 1/2 cup margarine, softened
  • 1 cup flour (self-rising)
  • 1/3 cup powdered sugar

    Filling:

  • 2 eggs
  • 2 Tablespoons lemon juice
  • 1 teaspoon grated lemon rind
  • 1 cup sugar
  • 2 Tablespoons flour

    Glaze:

  • 1/2 cup powdered sugar
  • 1 Tablespoon lemon juice

    Heat oven - 350oF. Grease 8 or 9 inch - square pan. Lightly spoon flour into measuring cup: level off. In small bowl, cut margarine into flour and sugar with fork until resembles coarse meal: press into prepared pan. Bake for 15 to 20 minutes.

    In small bowl, beat eggs, juice and rind. Beat in sugar and flour. Pour over crust. Bake for 15 to 20 minutes.

    In small bowl, combine powdered sugar and lemon juice; stir until smooth. Drizzle over warm bars.
